Discover the culinary riches of St. Maarten! Meet Tortuga, a proud member of St. Maarten Flavors, right on the edge of the beach. Here, Caribbean influences and international classics come together on a broad menu of fresh, generous dishes, served by a team that turns dinner into an evening out.

Start your evening with a few dishes to share. The Shrimp Tempura is a house favorite: lightly battered shrimp with sweet chili sauce, crispy outside and juicy inside. Don’t miss the Island Stuffed Plantain Cups either, filled with chicken or beef and seasoned with Caribbean spices. Savory, a touch spicy and unmistakably island. Order both and taste each version!

The main course selection is wide, from bowls and pastas to pizzas and steaks. A few highlights:

  • Catch of the Day (Tortuga’s Signature Dish): fresh local mahi-mahi, marinated in island spices, grilled and finished in the oven. Served with seasonal vegetables, homemade mashed potatoes and a slow-simmered Creole sauce. A true taste of the Caribbean,

and available at a special Flavors price of $32!

  • Jerk Chicken Power Bowl: jerk chicken, black beans, cucumber, tomato and jerk dressing on your choice of rice or greens. Spicy, fresh and filling.

  • Caribbean Lobster Pasta: chunks of lobster in a creamy garlic pink sauce. Luxurious, and rightfully a Tortuga favorite.

  • Fettuccine Alfredo: the creamy Parmesan classic, vegetarian and simply delicious. Add chicken, shrimp, tuna or lobster if you like.

  • Tenderloin Steak: tender beef tenderloin with red wine sauce, perfect for meat lovers.

What sets Tortuga apart is how well the kitchen listens. The chefs and team think along with your wishes, so if you have a special request for how a dish is prepared, a sauce or a side, they are happy to look into it.

Still room for dessert? The selection changes, so there is always a new surprise. During our visit we enjoyed a warm lava cake with ice cream, a creamy cheesecake with ice cream and a cheerful sundae.

And a visit to Tortuga isn’t complete without a cocktail: from refreshing frozen drinks to house-made signature creations, everything is beautifully presented with a garnish that adds that extra touch.

Perhaps the most striking thing is the team. In the dining area and the kitchen alike, the atmosphere is warm and relaxed, with friendly staff who take the time to help each guest, with suggestions, adjustments and always a smile.

In short, if you are in St. Maarten and want delicious food, good cocktails and a team that truly listens, Tortuga is a great choice.
