Caribbean Night at Tortuga Maho

Every Wednesday, Tortuga Maho turns sunset into a full-blown Caribbean celebration. From 6:30 PM, local dancers, live musicians and the occasional limbo contest take over the sand right on Maho Beach for Caribbean Night. The kind of evening that pulls guests straight out of their seats between courses. Add the sound of waves, string lights and the last planes of the day gliding in low over the water toward Princess Juliana International, and you've got one of the most photogenic evenings on the island.

It's also the perfect night to try Tortuga's St. Maarten Flavors signature dish: the Catch of the Day. Fresh local mahi-mahi, marinated in island spices and finished in the oven, is served with seasonal vegetables, homemade mashed potatoes and a slow-simmered Creole sauce. Flavors Price $32. It's a dish that sums up Tortuga's whole approach to cooking: simple, fresh ingredients from the island, prepared with just enough technique to let the flavors do the talking.

Add in Tortuga's daily happy hour (3–6 PM) and nightly live music from 6:30 PM, and Wednesday becomes the night where all of Tortuga's best parts line up at once: sunset views, island entertainment, and a Flavors dish worth flying in for. Reservations are recommended, especially for dinner seating, but walk-ins are always welcome for beach seating and drinks.
